It is done without a menu.
Hold down "2" and then press another input (see the first page of this thread for the different settings).
Release the second input and finally the "2" button.

No input while holding "2" results in the default setting.
(In addition, the Z button can also be used for mapping the C-Stick to IR)

You can´t map input individually (as far as I know) but the differents setups are great.
You probably want the one with DPadRight.

Press and hold 2.
Press DPadRight and release.
Release 2.

I hope you could add a mapping that is exactly likke Naggers but instead of moving cStick with C+Nc Tilt you can move it with C+DPAD, is very uncomfortable to play Super Mario Sunshine like that since every slight movement to the NC can turn the camera while i shoot water

Also, i already tried changing to IR and its the same, any slight movement move the camera

Horrible layouts. NC tilt ruins good ones. No L button or C stick ruined another. Its like Nintendo made this.

Is there a way to change the default configuration so that I don't have to change it everytime I boot a game or my controller disconnects?

I get that this thread is old, but would there be any way to make my own layout, perhaps with a .dat file? None of these binding really sit well with me, so it would be nice. Besides, with all the pre-made layouts, sharing a controller in Mario Party 7 is pure carnage.
That being said, the default config works shockingly well with Sonic R

this is where the gamepad controls are stored in the file. I've seen classic controller, classic controller plus, nunchaku, and wiimote button settings in here (haven't looked for normal pro controller).

Did you use Visual Studio code to edit it? After that, how can you combine all source to "boot.dol" file? Sorry that I don't know the codding. So, I hope to get the detail guide.

*Just the personal asking: can you help me to make this change of button mapping?

I can change the buttons, but there's a bug in so doing that I don't know how to fix. if you try the reset button combination to get back into nintendont, it freezes. I found that portion of the code, but I don't understand it. to compile it, you need devkitpro as well as some dependencies like zip, possibly unzip, and a few others iirc. I could do it for you, but you should make the changes, and I'll compile it. if you want to make changes to the wiimote or nunchaku, they're in there as well. and, yes, I did use visual studio code.
