Apple Jailbreaking question

I'm about to jailbreak my iPod touch 4g iOS 5.1.1 using Absinthe, and it recommends backing up and restoring before doing so.

So if I restore then jailbreak I lose all my apps, and data. Can I possibly restore from that backup without losing the jailbreak to keep my apps and data?

yes.backup is highly recommended before a jailbreak.
syncing with itunes and backup in icloud, just to be safe.
jailbroken my ipod touch 4 (fw 5.1.1) using sn0wbreeze v2.9.5, took longer than ipad2,it creates a custom IPSW file for you to use.
i used absinthe v2.0.2 on my ipad2. not easy if you have lots of apps and i had to setup new ipad for it to work.
my 4s still jailed,though.
so yeah, backup first.
