There are admittedly loads, but when it comes down to it, it's only a couple that's worth mentioning.

Classic Controller [Analog Triggers]

Pro Controller [Digital Triggers]

Hori Turbo Controller [Analog Triggers]

Hori Battle Pad [Digital Triggers]

I'd personally go for the Classic Controller and Hori's Turbo Controller, even though I already own two GCN controllers as it is. It's just cool to own them and they don't lose their value. Either that, or a Brooks converter which I read works very well.

P.S. I used to own that Hori Pikachu controller, it was really cute.

The GCN controller is my preferred controller for Mario Kart Wii.
