I've noticed when I'm playing games or leaving the console in sleep mode that it will drain more battery on SX OS than it would if I were using the stock firmware. Is this normal? I did a test and I got about 2h 20 min playing Zelda BOTW (full brightness, full volume, wifi on) when playing on SX OS. I remember doing the same test on stock firmware a while back and got over 3 hours.

No, it is not normal. Sx os does not run anything in the background, don't allow sys-module, unlike atmosphere, which does allow sys-modules. It should take the same amount of battery.
Try testing with stealth mode turned off, it might make a difference.

Okay thanks I will try testing it without stealth mode.
