Hacking Anyway to fool the Weather and News channel that there's still data downloaded on my console

I don't care at all what the actual weather and news was. not even if they ever update or not, since there were packets available for download at wiibrew:

I just want to let the channels recognize the packets and allow me to enter the channels, glazing at the globe and listening at the music...

I highly doubt since it goes through Nintendo's WFC.

Either way you needed to patch the channels if so.

I've been working on this, and I can say yes.
You need dumps from old data sent from Nintendo's servers, and I managed to get the News Channel to load, although it isn't current data.
I should be posting a thread soon with my findings and a walkthrough.

Edit: This requires no patching for the News Channel.
