This is my method for obtaining the Banners from Games (fastest method for me):
Open up the .ISO with WiiScrubber.
Go to the Data Partition.
Scroll down until you see "opening.bnr"
Right click and hit "Save/Extract"
Rename that file to: 00000000.app (This contains the Banner/Icon/Sound files)

So if you wanted a Mario Kart Wii Channel, you would replace RCPP18 with RMCE01.

Obtain a wad file you would like to use as the base.
Unpack the wad, replace the 00000000.app with the one from the ISO.
Rename the .dol to 00000001.app and replace it.
Repack the wad.
I then used the app: "NEW VC INJECTOR" to give the channel a title ID corresponding to the game.

For Mario Kart Wii, I gave it a title ID of: MKWI

You may use Wadder if you would like as it may be easier but I like doing things manually.
But this is exactly what I do to make channels that launches games stored on a USB drive.
