It's not as sharp because the Switch only outputs at 1080p. Your 1440p monitor has to upscale the 1080p input and, as PC monitor upscalers are extremely basic (because you're only expected to use devices that can output its native res), it's going to look blurry and meh almost regardless what you do.

At best you could see if your monitor has a 1:1 scaler and use that to make everything look sharp. This will produce black bars on the borders and will result in a smaller image, but that's about the best you'll get without using some better quality external upscalers...which is very expensive.
