I heard you can earn points from just downloading demos from the eshop, but ive downloaded many free demos to this day without earning anything.

From what I have heard only some of the demos give club nintendo coins. However I have tried downloading them and they either don't show up in my club nintendo account (their patches do though) or don't give me the coins despite appearing as registered.

The demos don't give you coins.

I think there are 3 games which give you coins for free:
Pokémon Bank
Rusty's Real Deal Baseball
Steel Driver Sub Wars
