Hacking Question Switch not allowing game to be played before system updating

Is there anyway to get around this apart for waiting for Emunand/Atmosphere to be released?

The switch promptly requests a system update and does not launch the game after the menu's shown in the screenshots attached.

Read the FAQ....... If you are on lower FW than the game requires u need to wait.

All game cartridges that i have tried are 000 and release day cartridges, They have previously worked on this firmware (4.1.0).

if you are on 3.0.0 or lower then just wait if you are on 3.0.1 or higher just go ahead with the update no real reason not too

Data seems to be missing, it seems like I can't play until I download some game data? I assumed all the data required should have been found on the game cartridge.

I previously had the same issue. If you can find another switch that can boot the game, you can try to synch game version. It has fixed mine.

Nope it instantly prompts me back to a software update and refuses to launch as I am not on the latest system version.

OP you seem to have deleted data from the SD, which includes game updates. Once a game has an update installed, it will no longer work without that update. The ones that say start software may be able to still be run, but the others you will effectively be locked out of until you can get the game updates installed again.
