Big improvement on performance after the update Dock Mode on v1.1.1 now pretty much feels like Handheld Mode on v1.1.0, there's also performance improvements to Handheld Mode on v1.1.1 but it's not as big as Dock Mode at least that's what I've noticed so far.

PS. You do not need to update the System Firmware to 2.1.0 in order to download and install the Breath of the Wild game update v1.1.1, the game update downloads and installs just fine on System Firmware 2.0.0.

Has there been a new update for Wii u version?
yes. the update also came out for the Wii U version.
can confirm that the frame-rate drop issue has been fixed in that version. the freezing in some fights have been fixed as well.

I have seen a few slowdowns from killing Moblins. It all depends on the area you kill one I guess because it doesn't always happen. I'll never forget this though:

Vinny killed a Moblin and the game glitched so hard a Korok found him! Appearently it turns out that perticular Korok used a "get big rock into hole mini golf" type game. Only since it was a snowy region, that puzzle used snowballs instead.

When the moblin died something went heywire and somehow that snowball rolled itself into the hole....Despite the fact that it was in a area far enough to way that it would be safe to assume that those objects would not have been loaded in. After a certain distance objects will despawn and you can see how far that is by simply using stasis on a large rock and launching it away to a area you can see. Then walk away until you see it vanish.

Those snow balls were in an area far enough away that they should not have been loaded in...yet somehow Vinny found away to glitch that Korok Puzzle. :P

I visited that area my self. But could not replicate it. However the game nearly locked up a bit when I killed that same moblin. I was not on a horse like Vinny though. Perhaps had I done it on horse back and got to the area quick enough and hit the moblin to trigger the ragdolll effect, perhaps I could have coaxed that Korok out like he did. :P

I was once paragliding somewhere over a canyon or something and was discovered by a Korok. Had no idea what just happened.

it's not uncommon for zelda games to be glitchy MM and LTTP GBA version were extra glitchy.

I've seen those type of glitches, and some got explained (like the snow ball thing) with the ingame weather- if there's a small snowball and really serious wind, the snowball might be moved by the wind, start rolling and get bigger. When Link is near and the object (the snowball) becomes visible, the game already concludes it as interactive, even if something else triggers the movement of the object. So, either if you walk/fly nearby and something triggers the puzzle to the point of completion- you get the prize :D Happy hunting out there :P

PS: About the update and its work- most places where I felt stuttering from the games are ok now and those who aren't, are at least with lowered problems.

wonder if the blood moon glitch(run the game too long and blood moon happen all the time) was fixed

That isn't a glitch. They are designed to happen more often if you experience 2 or more without taking a break. Play long enough without exiting the game, yeah you will have nearly every IRL hour. It's like how the fairy naggs you in ALBTW to take a break after 2 hours of play

Thinking about getting a switch and will only ever use it in handheld mode. Am I right in thinking that playing handheld Zelda doesn't have any framerate issues at all and that the problems lie in docked mode?
