Here's a list of "exclusive" Dreamcast games that are currently playable on the Wii through ports, remakes, compilations and emulation of other consoles (e.g. many arcade ports can be played in their original arcade versions). Games that were cross-platform at launch aren't included.

----
Chaos Field
Later ported to GameCube, and was included on Ultimate Shooting Collection (aka Milestone Shooting Collection) and Milestone Shooting Collection 2.

ChuChu Rocket!
The Game Boy Advance version (including the original Dreamcast puzzles and a couple thousand more) can be emulated on Wii.

Crazy Taxi
Later released on GameCube under the same title.

Evolution: The World of Sacred Device
Can be played partially in Evolution Worlds on GameCube--the first two dungeons and final boss are featured, with heavy use of cutscenes to abridge the game. To play it in full, there's Evolution: Eternal Dungeons for Neo Geo Pocket Color (emulated by WiiMednafen), which translates the entire Dreamcast game to handheld.

Evolution 2: Far Off Promise
Can be played in full as part of Evolution Worlds on GameCube. Roughly five hours in, the game relatively seamlessly transitions to the second Dreamcast title.

Giga Wing
This shooter was originally an arcade title on CPS-2 hardware. You can play the original game in RetroArch.

The House of the Dead 2
Included on The House of the Dead 2 & 3 Return on Wii.

Hydro Thunder
A port of the Dreamcast version comes bundled in Midway Arcade Treasures 3 on GameCube.

Ikaruga
Later released on GameCube under the same title.

Karous
Included on Ultimate Shooting Collection (aka Milestone Shooting Collection) and Milestone Shooting Collection 2.

Mars Matrix
This shooter was originally an arcade title on CPS-2 hardware. You can play the original game in RetroArch.

Marvel vs. Capcom
This fighter was originally an arcade title on CPS-2 hardware. You can play the original game in RetroArch.

MDK2
Later received an enhanced port as a WiiWare title for Wii.

Phantasy Star Online
Remade on GameCube as part of Phantasy Star Online Episode I & II.

Phantasy Star Online Ver. 2
Remade on GameCube as part of Phantasy Star Online Episode I & II.

Radirgy
Received an enhanced remake on GameCube as Radirgy GeneriC, and was included on Ultimate Shooting Collection (aka Milestone Shooting Collection) and Milestone Shooting Collection 2.

Resident Evil Code: Veronica
Received an enhanced remake on GameCube as Resident Evil Code: Veronica X.

Samba de Amigo
Later remade on Wii, including most of the music from the Dreamcast original along with new content.

San Francisco Rush 2049
Was never really an exclusive, since it released concurrently with a Nintendo 64 version, but Midway Arcade Treasures 3 on GameCube includes a port of the superior Dreamcast version.

Sega Bass Fishing
Later released on Wii under the same title.

Skies of Arcadia
Received an enhanced remake on GameCube as Skies of Arcadia Legends.

Sonic Adventure
Received an enhanced remake on GameCube as Sonic Adventure DX: Director's Cut.

Sonic Adventure 2
Received an enhanced remake on GameCube as Sonic Adventure 2: Battle.

Twinkle Star Sprites
This shooter was originally an arcade title on Neo-Geo hardware. You can play the original game in RetroArch.

Vanishing Point
Later received a port to PSX, which is playable on WiiSX.

If I missed anything, that sucks, I didn't try that hard. Let me know and I'll probably update this post.

Marvel vs. Capcom 2 was on NAOMI (≈ Dreamcast) hardware in arcades, so no chance it runs in MAME on Wii, and it didn't get a PSX release--DC and PS2 only. Capcom vs. SNK 2 was never a Dreamcast-exclusive.

I'm not aware of any way to play Power Stone on Wii.

Grandia 2 would've been nicely ported on GameCube but instead it was released as a half-assed port on PS2. :(

Yes, it would have been a better choice. The PS2 port is just as bad as the Windows port; failed spell animations, reduced quality in audio (both music and sound effects), inconsistent framerate. Indeed, it was pretty bad.

Thanks SickPuppy and clarky; Vanishing Point, Sega Bass Fishing and MDK2 have been added to the list. I didn't add Jet Set Radio as the GBA game is a significantly different title, it feels more like a companion game than a port.

some of these games now have HD ports on the ps3 and xbox 360 now, also a few games on that list were also released on the original xbox 1 too, still it's a good list though.

Yeah, the idea is just to list games that were exclusive to the DC at launch but are now playable on Wii in some fashion, regardless of where else they've also been made available. These also aren't necessarily the best versions, just what can be played on Wii.

Skies of Arcadia?
Has been on the list all along.
