Apple Will restoring update my iPod?

I'm currently on iOS 5 and I want to restore my iPod to factory settings but stay on iOS 5. Will iTunes auto-update me to iOS 5.0.1 when I click restore? I'm sure it won't but I'd just like to confirm.

EDIT: Nevermind. iFaith (to cache SHSH blobs + build signed IPSW with said SHSH blobs) + iReb (pwn iTunes & allow restore from signed IPSW) = profit
