Modifying save files is generally not a worry in exclusively singleplayer games. However if the game has any kind of online mechanic that is a major risk.

Long as it isn't really interacting with Nintendo's servers there isn't a problem. Local multiplayer would be fine. But leaderboards and any online multiplayer is a risk.

Just make sure to set up DNS MITM and local multiplayer should be pretty safe, I guess. I've only played Animal Crossing: New Horizons in local multiplayer and I hadn't run into any issue so far.
