This regards to a Wii purchased with photo channel v1.1-b pre-installed.
Is it possible to use any title deleter to delete the current channel and the install the old version (v1.0) via a WAD file? Will this have any fatal implications?

It's doable and relatively safe. I'm sure everyone prefers the older Photo Channel before they reduced its media compatibility.

Aren't you able to just remove it through the Data Management, at least this works with downloaded Photo Channel 1.1, rmeove it and 1.0 will be there.

No, there's only an option to delete it if you downloaded it from the shop channel. New wiis (at least ones from January 2008 and on) have 1.1a or 1.1b preinstalled, so you can't delete it.
