The first two that come to mind are Super Monkey Ball and WiiSports.
EDIT: Tony Hawks and just about all the racing games so far aswell should work primarily with the wiimote, if not exclusively.
But expect Wario Ware and WiiPlay in the near future with WiiPlay coming with a Wiimote.

Thanks for your help guys! I thought I remember seeing the Monkey Ball box had the nunchuk symbol on it. Does that mean it's just an option to play that way but you can still play with just the remote?
