I know you have to convert PS1 games into eboots or ISOs or whatever. I don't know..?

but also what do you do to save games while you are in a game?

The PSP firmware can play PSX games natively through it's own pops emulator. It's just like loading a PSP game...you play just like normal, which includes saving. (...of course this requires custom firmware to activate though!)
