I didn't even bother trying, but I assume it would work. Uncertain why you would want to limit your device to only being able to use hbmenu, but be my guest.

I replaced mine with the Wifi Selection dialog, so that whenever I try to access the eShop or the Internet Settings, it launches hbmenu. I don't plan on connecting my device to the internet, so this is useful and will prevent me from doing so!

Would using HBL for the sleep mode button on the GUI cause an issue though since it could be calling the same function as sleep mode as a whole?

Just change the name of the title id directory to your desired applet, and open the NPDM in a hex editor and change the instances of the title id there to the one you want to replace.

Is it normal that when i try it that it crashes do i need to do something or is it because im on 5.1.0

You're not modifying the NPDM correctly. What title are you trying to replace?

I would try doing this to another applet using the method described above and see if your luck changes. I did not test the file I attached, but I'm doubtful you being on 5.1 has anything to do with it.
