However, I created a emunad but then I backed up my nand afterwards, does it matter or should I start again?

What nand, sysnand or emunand?
It doesn't really matter if you backed up your sysnand after the emunand creation.

got the back up emmc, raw gpt and pro keys. Is that correct?

Shit be fine as long as you didn't boot atm in sysnand before you backup. Creat emummc is just a mirror of the ofw
