What are the odds for something to go wrong?

    Hell
If you follow the guides correctly, and keep valid nand backups, you will be fine. Just make sure that the NAND you are about to restore is okay with OTPHelper before you restore it

    Between here and there
quite low, unless you see something has screwed up (hardware malfunction) you should be fine if you don't do anything silly that the guide doesn't tell you to do.

If you follow the guide 100% correctly, I'd say that you have a better chance of getting shocked by lightning today than bricking.

While Downgrading Rednand on New3DS, at the start I'm seeing some v.00000 -> v.00000 -> DONE

    Is this normal?

    I mean, Version 0 to Version 0?

Or is this kind of bugged?

    ¯\_(ツ)_/¯
If there's no error, then you should be ok.

I saw that v0000 -> v0000 thing too, not sure what causes it but everything ends up working fine. Given that OTPHelper verifies the downgrade you'll be good.
