Can I just open a charger, and simply desolder the cable from board, flip it and solder it back so it becomes (+)(-) to (-)(+)?

Yes, provided there isn't a third wire hidden somewhere.

Unsolder the wires and solder them the other way around.

You can also get adapters that will reverse the polarity, got one with a kit.
