Can I uninstall custom ROMs and get my original firmware back? Or perhaps, can I somehow backup my current firmware? I have a Motorola Defy which is on Froyo and is rooted.

Well I think you cant uninstall ROMs easily but you can easily reflash an official firmware over it easily. You can use one from here : http://and-developers.com/sbf:defy . As for making a backup of your system there is this : http://forum.xda-developers.com/showthread.php?t=875233 & this http://forum.xda-developers.com/showthread.php?t=893291 if you want to do some messing with your defy .Finally just please make sure that your defy is supported by whichever firmware you are going to flash if you decided to do that as you can end up with a bricked phone easily if you don't research probably when doing this sort of stuff .

Thank-you so much! Managed to install CM7. Backedup and restored all my data using titanium backup.

There's just one small problem. My network connectivity keeps dropping and usually stays at one bar. How do I fix this?

Well try to forget your network & reconnect that might work . If not then its one of the bugs as stated here http://forum.xda-developers.com/showthread.php?t=1033654. If you want you can try installing the latest nightly build or just wait till a new version comes.

Edit : well for the above I was talking about wifi network if you are talking about regular phone network then probably you need to change you baseband to one that works well in india. you can use this http://forum.xda-developers.com/showthread.php?t=1052745 to do the job.
