Would be cool if for one last hurrah that ties into this, they made Amy a playable character in Sonic Mania Plus. For that matter, I wish these animations were added into Sonic Mania Plus to be unlocked and watched within the game whenever you like.

That is a really good personal touch.. the detail and the care that went in to it!

They should make longer episodes for everyone to enjoy and cover more sonic 1-3K

If only. Would be amazing if as a little Christmas present to us, they added Amy and Ice Cap Zone (likely would have different music, though) as free DLC.

It's nice to see that they gave Amy some screen time and I'm glad that, unlike her modern version, she didn't mistake Metal Sonic for the real one (It would have ended up being a nod to SA2's "Amy meets Shadow" moment if they had gone with that instead). I wouldn't mind seeing more Sonic Mania Adventures in the future. It'd be neat if they used it (or another new shorts series) to tease an upcoming game and possibly bridge the gap between it and Mania, assuming they end up being related to each other.

I know this is a hot take, but I would not be mad if the future of Sonic ended up being quality Classic stuff like Mania and Mania Adventures.
