Every Switch 2 edition of a Switch game is better solely because of the improvements in technical performance but some offer better new content than others.

Super Mario Bros. Wonder is widely regarded as having poor quality Switch 2 exclusive content but if you own a 4K TV then you'll want this version because it runs at a 4K resolution. Incredibly unfortunate given that the base game only needed reworked boss battles to become one of the best games ever made.

Kirby and the Forgotten Land has some new paths added to certain levels and these new paths are apparently a lot of fun. I haven't played it yet but plan to in the future.

I think that the only "worth-it" S2E is the Kirby one, yeah. The only S2E adding new content that you didn't mention is Mario Party Jamboree, but it seems that it's just a small minigame pack using Switch 2's new gimmicks.
