There’s a decent PS Vita version as well as Nintendo Switch, could this run on Wii U at a decent speed? I really miss the Dreamcast 🙏

It would really depend, emulators on Wii U have always been a bit iffy even with proper optimization, with a select few being an exception (Just look at PPSSPP) But that's beside the point, as the person above me stated the main factor would be if someone actually wanted to take the time to port it themselves.

I understand that but I don’t know the specs of the Wii U compared to the PS Vita so I thought to ask if having it running decently on the PS Vita means the Wii U can run it too or not, would be interesting if someone took the task but I understand Wii U homebrew isn’t very big.

On the contrary, it's not that the scene isn't big, it's just limited. The Wii U's hardware isn't bad per se but it does require some serious optimization to make things run the way you'd like ESPECIALLY with emulation. And comparing the specs from the Wii U and Vita they're (guesstamated) around the same operating level with the Wii U being slightly better.

Doing a bit of rought quick and lazy research it's shown that the Wii U has more RAM and slightly higher processing speeds.

My understanding has always been that the Wii U should be capable of playing a Dreamcast emulator at decent speeds, but it would take some serious optimization from someone truly dedicated to getting it to work on the system. No one has been working on such an emulator on the system as far as I'm aware. So don't exactly hold your breath on it, but stay vigilant all the same, your request isn't without merit, maybe one day such a thing could drop on the Wii U or maybe not, either way I wouldn't anticipate it happening anytime soon.

The main problem with the Wii U is the CPU, it is just too old and slow for something like this and lacks blast processing. Unless you code a heavily optimized emulator specifically designed for the console specs, this is very unlikely to happen.

A redream port would be possible it's very light weight even on old CPU Nvidia shield hasn't got a good CPU but can run it fine also with a little optimization it would run better
