I was wondering if deleting system channels I don't want with AnyTitle Deleter would give me more room for saves and channels.
Or are they on a separate partition or something?

It gives you a little more, but not much. The main reason to do it is to get the spaces on the Wii menu. Also don't delete shop.

what do I use to uninstall these?
I don't need any of the default channels, not even the shop channel or do I have to keep that?

    I want to delete
    News
    Weaher
    Shop
    Photos

all that crap is useless to me.

Is it safe to do this on 3.2E and how?

It should be safe, just don't remove any IOS's and other important things
I deleted all System channels except the Mii channel on System Menu 4.0U.

    I used this:
    http://wiibrew.org/wiki/AnyTitle_Deleter_MOD

If it gives you any errors, you might have to run IOS downgrader
