FrozenRom 1.2 on my Epic with a mattedreds theme. I tried flashing CM7 (I wanted Gingerbread) But it didn't work.

I got an S2 as well my advice stay away from cyanogen at the moment, I used it and theres too many bugs at the moment, so much that they've downgraded it from stable to RC, I had issues with it forgetting my ringtones and not making a noise when people rang me, random reboots, and loss of audio at times (music).Think of it as the entire operating system your phone is running.What is a ROM? On the S2, you're running Android 2.3 with the TouchWiz 4.0 layout, and all of the interface (the Android firmware, the TouchWiz skin and everything) is the stock ROM.
Kind of like a Linux distro or something.
Anyway, I'm running stock 2.3.4 on my Galaxy S II at the moment, though I have been toying with the idea of putting CM7.1 on it.
I also recently successfully downgraded my old X10 back to Android 1.6 to relive the old days.
Oh yeah I prefer cyanogen but thats just cause I'm used to ASOP roms and I like all the tweaks and how ahead of the game they are, but until they've worked the bugs out and I see positive feedback I'm going to stay away for the time beingYeah, I read about the stable being reduced to Release Candidate, so I was going to stay on stock for at least the forseeable future.
I have used CM6.1.3 on my X10 before, which I quite liked, so I might reflash that or another version at some stage.

I accidentally bricked my first android, I know exactly what I did, but I'm never flashing anything ever again... Besides, I managed to make my phone look JUST like how I want it, very nice too!
