I bet it will show video out to your last output used in your settings regardless, but if you go into settings you can change to either one.

It will most likely only display video over the composite connection. This is due to the bridging of the pins on the connector that enable/disable video modes. You should however be able to configure audio to output through the hdmi if you have a receiver with an hdmi connection.
 
I use two monitors, on the composite, when accessing the system configuration and seeing the output, it says it is HDMI, but on the HDMI it says it is connected via composite, lol

Ah, @ProjectGD. Don't think attaching both HDMI and Composite cables at the same time will work. It doesn't brick your Xbox 360, but it won't display anything.

As for configuring the video out, navigate to 'Settings' and there should be an option to change the video output settings under 'Video' or something.
