As the title says, I assume this isn't possible when we're blocking Nintendo servers, right?
I'm sure you can tinker with ldnmitm and use local coop, I managed to use a certain build of one of the pc emulators that had ldnmitm built in to coop with myself on my Switch (using incognito since 90dns was slow probably banned never cared) back when PKSV came out but that plugin steps in and redirects you when you get it setup right I believe you can even host your own private server and play with just your friends even if they are far away with a bit more effort
Despite having a phone that should run the emulators fine I haven't bothered trying them I feel like the biggest hurdle is do they support multiplayer or whichever on phones.

Has anyone done any digging on the mobile phone part? From what I know you just open a nintendo.com web page on your phone's browser to join the game, instead of using a specific app. Makes me wonder if the mobile phone interface website is hosted on the switch itself and nintendo is just forwarding the connection. If so, is it possible to mod the game and open the http server to local network, so the game could be played with phones offline?

Highly doubt that. It's most likely a backend on Nintendo's servers, handling the phone connections, redirecting inputs to a user's Switch via API calls and a frontend server application (aka website) hosted by Nintendo as well. I can't imagine Nintendo implementing something as a website server into a Horizon app.

I believe it will be possible once someone releases the mod. The same story was with Jackbox game.

    Agreed, that why I try to buy all my games on disc, Xbox anyways. Switch games (which I pirate tbh) don't matter much, I stay offline 24/7 anyways.

    @BakerMan - you can still "own" digital media, arguably easier and better than physical since you can make copies and backups, as much as you like.
