Er, i really don't know what else to say. Um, i dunno much(IE NOTHING~) but try to let her know eventually i guess? I mean, saying it right after this wouldn't be the best idea i think. Or maybe tell her that you said that out of surprise, but aren't willing to reveal who it is yet or something.

I don't like my chances personally.
I've known her for 2 years and she
would probally think of me as a friend...

I only really started liking her within the last two weeks but
today she's been doing my head in! I cried on the bus
over the thought of her saying no... (watery eyes not major bawling
crying).

Guess I'm too chicken right now. I'm going away for 2 weeks from tomorrow
after then will probally be the best time.

Again, i am probably horribly wrong but it might be better to do this in person. Doing it over the internet would make it seem you are too afraid or that you are not actually very serious or are just joking.
Maybe you could just ask her out and go on a few dates and then finally confess, DON'T DO IT ON THE FIRST ONE THOUGH.
