I have fat PS3 cfw with a 120gb HDD installed and I'm looking to switch it to a 500gb sata Hard drive. I would like the PS3 to remain running on cfw. How is this possible to do

Depends. CECHA-G are NAND, and you just take the old one out and put in the new. When you turn it on it will format and you’re done.
Any other, you put in the new drive, then have your Rebug or whatever CFW you’re using on the usb in the second port. It will format then install the CFW.
you can upgrade the normal way and install cfw again (if on NOR). if you're not on NOR, I don't think you have to reinstall the firmware.
