Lets say I hypothetically had access to a switch retail kiosk and wanted to dump a demo off of it. Would I be able to dump a XCI/NSP from the kiosk with currently available tools?

XCI, yes, very easily, can run a cart dumper right on console to SD card. NSP, much harder. Usually needs to be connected to a PC, dump some keys, dump either NAND or Decrypt SD seed based on if it's installed to NAND or SD, kind of a hassle.

Is it possible to dump titles from NAND dumps? I have a feeling the demos are installed onto the console rather than on a cartridge.
