I tried to FTP over 2 nsp files that are > 4GB and it timed out....
I can't plug the SD Card into my PC and transfer bc the SD Card is FAT

What options do I have?

That is because a FAT formatted SD card can only store files up to 4GB.

I vaguely recall there are some tools to split NSP files into smaller parts.

Another approach would be to install the NSP over USB directly onto your Switch.
NS-Usbloader and Goldleaf can do that.

I plugged the SD Card into my computer and tried to copy the files and got an error of something to the effect of the file is to large

That is the FAT32 restrictions
Precisely.

Each disk format type has its restrictions, up to FAT32, the "biggest" single archive supported was a ~4GB one, beyond that file size the copying would fail or not even start.

Starting with NTFS (on Windows OS), that limit was surpassed.

Sadly most consoles, support FAT32 (or simmilar) disk format and so their restrictions apply.

I feel like you're conflating "copy" with "install". You don't need to copy the files to the card, you simply need to install them via one of the install tools, DBI/Goldleaf/Tinwoo/Tinfoil/etc... While the computer -> Switch transfer terminology is technically "copy", the install tool is doing an install rather than simply placing the files on the card.
