I currently have my Wii on 3.2U and with HBC amongst other stuff and have not played it in a long time so I have not kept up with anything. But lately I am thinking of getting a new game maybe New Super Mario or Wii Sport Resort. I have a feeling I will be forced to update to support such new games and was wondering what the minimum version or best I can use is?

Also I can't remember the name of the software I used (have not thought Wii in a long time) but I have it so my Wii skips the health screen and does not force disc based updates Can I still have that on newer firmware?

Thanks, also is there anything that will safely straight to 4.1 I could only find one to take me all the way to 4.2 or would it hurt much to just go to 4.2 and be done with it.

There's a few guides here that show you how to update to 4.2 and keep all the functionality. I'd just go with that and update. You can use Priiloader to skip the health screen and stop disk updates.
