Okey, so this answer comes from experience, I did this months ago for my own console. Hopefully anyone that ever asks if this can be done successfully, finds this thread from Google.
Yes, you can delete the original Mii Channel in vWii with AnyTitleDeleter. And yes, go on and install Mii-Channel-NUS-v6 from the original Wii after that, preferably obtained by yourself (be careful with corrupted or malicious wads obtained on the internet). You can get the wad from the Nintendo servers (with NUS Dowloader, for example) and then install it, without issues.
After that, you will be able to transfer your Miis again, to the Wiimote and back to the console, or even edit them on your PC if you want to, by extracting the Miis from a synced Wiimote. You're welcome!

It’s worth mentioning Miis which are stored on the Wii U Mii channel don’t carry over to the ones on the vWii Mii channel, I’ve always found this odd, why can’t it just auto generate them to the vWii Mii channel? They’re using the same system.
