Hello, I'm very much new to wii u modding/fixing, I bought a Wii from a thrift store about 2 weeks ago, and upon turning on the console, it showed no output and just had a blue light. The console would make disk noises then eventually just make fan noises. The gamepad would turn the Wii u on, but couldn't connect to the console despite multiple attempts. I used paid the beak to boot into minute and tried to install isfshax, but said my console was unsupported (8354), so i looked through some threads and used a version of isfshax that allows to be installed, but now the wii u flashes blue when starting up, with the same issues as before.

I suspect its SLC corruption, and so i tried JNUSTool and wafel_install to fix it, but once i press on the 4th option (Patch sd and boot ios_orig.img), the light would go from purple to blinking blue, but then stay like that forever. The light never stopped blinking, and the screen would end in "Jumping to IOS. . . GO GO GO". I let the wii u blink for 2 days and no results. Wafel_Setup_Mlc.Log just says "OpenDir;/vol/sdcard/wafel_install;-00000000" and nothing else.

I have no idea what I'm doing wrong, there are times i put another file in and it starts blinking and other times where the light just stays purple, but the only thing similar is the fact that the log only says "OpenDir;/vol/sdcard/wafel_install;-00000000" and the stuck screen of " Jumping to IOS. . . GO GO GO", I've spent 2 weeks trying to fix this and now I'm asking for help.

No, you get the blue blinking, because you installed ISFShax on a incompatible boot1. It does not work with 8354 and you get the blue blinking, because it now already crashes in boot0.
I recommend you update the boot1 to the latest version, but syncing the boot1 version in the seeprom might take a few tries with ptb.

How would I do that? Do i need to get a boot1_SLC.RAW file from a different working wii u?

You restore the boot1_SLC.RAW. if it then hangs during syncing of the boot1 version, then you have to reload with PTB and try the sync option in the Backup and Restore menu until the sync is successful.

Done! I've downloaded ISFShax and it now works, but now im unsure of where to go from here, because i stlll believe it's bricked, should I try updating the SLC and/or MLC?

If there is no important data in the mlc, you just can download the complete mlc and SLC with the downloader so you could restore both.
