Hardware Would any 1TB Hard Drive work in a Xbox One S

Lets say I were to buy a console with no hard drive in it to fix, would I have to buy a specific model of hard drive in order for it to take the OSU (offline System Update)

Any 400gb+ 2.5" HDD would work. HDD, SHDD or SSD. It isn't locked to a specific brand like the 360. It is recommended however to be a 500gb, 1tb or 2tb

yea the only thing is that xbox one can have many variables to them as well as board related issues that i cannot fix

Well in my experience, if it powers up and has a/v that's half the battle.

Any 1TB HDD or SSD will work yes.

Edit: I heard that installing a 500 GB HDD in a 1TB console can mess things up.
Getting errors booting and what not.
Best is to install the same sized drive or bigger.

im torn between xbox and or switch, but switch is running a huge gamble
