Could someone tell me what I need to do this for?
I just need to make sure I know what I'm doing.

Just do it. Some pretty weird shit can happen when you don't. But keep in mind that it erases everything on the card.

Weird stuff? Like random freezing? Or glitched up screens?
    I guess I'll do it...

What would formatting my SD card really do though?
Or what would happen if I didn't?

Weird stuff, like programs not working properly, stuff getting corrupted, etc. Formatting the SD card just sets up all the sectors in such a way that everything's nice. But to do this, you'll have to use the official SD formatter. Don't just use the windows one...it won't help.
