Hacking Updating fat ps3 and hack later

Hi guys, I'm planning to buy an old fat 60gb ps3 because I can't find 2000 slims.
My plan is to update it to latest version use the psn for a while and then downgrade to hack it.
Is that possible?

With a hardware flasher, yes.

Buying a used fat is kinda risky because it's possible that it has already been banned on PSN. I'd advise getting a new console instead, using it for your online needs, selling it while it's still under warranty and getting another hacked or hackable PS3 for your offline needs.
This may not be as simple as using single console, but it's risk-free for both your console and PSN account(s).
