Guys, I tried out this soda and for some reason it tastes terrible. Does anyone have a clue as to why?

If it, as you say, "becomes a non-issue after a little bit of game time", then why not make a non-issue altogether by scrapping the mechanic entirely? Don't slow the player down by forcing them to wait for an arbitrary gauge to refill? Don't require them to cook stamina-increasing foods if they want temporary relief from it? Don't waste shrine orbs on increasing an arbitrary gauge, when they'd be much better used increasing Hearts (and, in turn, the stupid meaningless orbs turned into Heart Pieces, like what used to be a standard before this dismal reformulation)?

Your point only helps my argument, so I sincerely thank you for that.
The same can be said about health, I guess you want them to remove that too.

Not really. Without health, there is no challenge, while without stamina you aren't slowed down at all when climbing or swimming.
Notice how previous Legend of Zelda games, and even some open-world games (Ghost of Tsushima, AC Origins), have health but not stamina, and yet they're fun games to play.

There is extra challenge with stamina, more creative things you have to come up with. Health is just annoying, you can't be killed if you have a little bit of food because you can't be one shot. They really should remove health because it just makes you create and eat food.

You can still come up with "creative things" without stamina, if you so desire, and a game without health - without actual challenge, which stamina does not provide - is barely a game at all.

If you don't want to increase health, because you want increased challenge (low-Heart challenge), you can just avoid cooking extra-Hearts food or avoid spending orbs - just like how in previous, proper Legend of Zelda games you could avoid the majority of Heart Pieces and even Heart Containers depending on the game. BotW and Totk don't slow you down at all if you don't increase Hearts and don't get hit, while they do if you don't increase stamina and the wheel runs low or especially empty.

Health is far more quintessential to enjoyable gameplay than stamina ever will be.
