I have created three small mods for Pokemon Let's Go Eevee (that also work in Pikachu if you change the TitleID of the folder) that I decided to share with you all today. They are compatible with each other, so feel free to mix and match.
Celadon Department Store Sells Moon Stones
As the name implies, this small mod changes the evolution stone shop in Celadon to sell Moon Stones. It changes only 4 bytes in the Shop_data.bin file. I have played with this mod for a while and saw no unintended side effects of the changes.
Evolve Into Aloan Forms
This mod replaces a bunch of Evo files to allow every pokemon with an aloan form to become aloan. I made this mod in order to allow obtaining every aloan in-game with no trade, as well as allowing for pokemon stats (IV's, Height, Weight) to carry over to the aloan form. It also adds a way for Meltan to evolve in these games, at level 40. If you are using another mod that already does that, delete the evo_808.bin file before applying the mod.
EDIT: So, the mod wasn't working right due to the game not allowing evolutions to the same species, regardless of form. So, changes had to be made. You can now evolve into aloan base forms from their kantonian evolutions (EX sandslash-> aloan sandshrew) and vice versa. Exceptions being the pokemon that only have one aloan evolution (pikachu, exeggcute, cubone), which evolve directly and cannot be reversed. Also, because I had to edit Graveler's (and aloan version) evolution data, I also included two methods of evolving into the third stage, lv 50 or Moon stone. And for the sake of completion Kadabra, Machoke and Haunter are also included. If you want to change the LV of evolution, edit the 32 at address 0x17 with any hex editor to the desired level. Meltan can now evolve with a moon stone as well. The download file for this mod has been updated.
One (or two) Pokemon species per Route
This mod changes the encounter table to make it so that all base stage pokemon can be caught in the wild multiple times. It made it so that most routes have only either one pokemon with 100% chance to appear, or two pokemon with 50% chance to appear.
I recommend only playing with this mod after finishing the main quest. It is ideal for chaining (for perfect IVs and shinies) and finding a specific pokemon of certain height and weight.
All pokemon encontered with this mod should be legit, as they are caught in areas they were already present, with exception of the Fossils, Porygon and Voltorb and Magnemite, that were moved to route 10 for balance.
This mod also allows you to encounter the legendary pokemon in the wild, with 10% chance on the same map they could be caught. Will probably not look legit because of the level caught difference. It also adds mew in Viridian Forest.

Max Level Shop Sells More Useful Items
This mod replaces some of the Post-game Mart items with new ones that are a great deal more useful. It allows to buy Master Balls by 10000P each, as well as Max Elixers, PP Max, Heart Scales, Max Revives ant the three Golden Berries (PS: due to the name size, the boxes in the mart display empty, but you can still buy them), Replacing Super Potions, the individual status heal items, Super Repels and Super Lures, But keeping the least expensive and the biggest duration versions of those items.
This mod includes the Moon Stone selling, so you can replace that mod with this one if you want both. I will also keep the Moon Stone singular mod so that you may keep using it if you don't want the (relatively) OP item choices.
