Before DVDs, before VODs, sometimes, there are shows that air on TV, but that won't show up on VODs or DVDs/BDs before the end of the season. And yet, they do show up on the internet episode by episode, only a few hours after they aired

Like I said, capture cards. Connect TV aerial/cable signal/whatever to card, rip digital stream to computer, convert to appropriate format.
