OK, so I'm thinking about rooting my s7. but first I have a few questions: Does it remove my warranty?
What is the chance of a brick?

Don't know but would I do for sure is that you lose your warranty

You'll void your warranty yes.
Especially if you trigger KNOX, this is irreversible.
