I'm not a fan of recommending prodinfo blanking. One file gets deleted, it's gone.They're interchangeable as far as protection goes. All I meant is it never hurts to have an extra layer of protection. Whether that's 90DNS or dnsmitm. I actually forgot that was a thing as I don't use either myself, I'm fine with just Incognito. But that doesn't mean having 2 layers of protection isn't a good idea, especially for someone who is less experienced with console hacking and might make mistakes and mess things up.
I should point out that Tinfoil's Incognito hasn't been needed for a while though, since PRODINFO blanking in Atmosphere does the same thing.

I'm not saying it's not a good idea for double protection. 90DNS has been very very slow for many many users. It's no longer recommended. That's all.

So the "permanent" method is not without its drawbacks either.
Because of that, PRODINFO blanking seems overall safer to me. If you lose that config file you can recreate it, but if you lose your PRODINFO you are screwed forever.
Yes you can do local. I do it with my girlfriend, we also play stardew and a few others
