Or some CREEPY games like SilentHill?

god eater has some pretty decent character customization, and plays in a similar fashion to monster hunter

Try Phantasy Star 2. It is a jrpg game and it is like monster hunter. If you like it, there is a group of people working on the english patch for the latest phantasy star series on the psp. Other game is Lord of Arcana. I don't remember finishing it but you fight demons and you can customize your player like monster hunter which is pretty cool. I might pick it up again. The other game I can think off of my head is Armored Core Last Raven. You customize your own mech and fight if you are into that.
