What is the size of the unpacked ISO?
If it is less than 1.48 GB, the "garbage data" in the ISO has most likely been ripped out to make the image smaller (similar to Wiiscrub for Wii games).
I don't know about Mac, but you could use a program called FileChop w/ a Windows PC to make the ISO size match the exact size of a gamecube game (1459978240).
Re-burn the new, larger image and give it a try.
If not, try Googling "filechop gamecube image". One of the hits that came up for me is "FILECHOP and GCOS Tutorials".
