The freezes can be solved with a reboot most times. (and if your console is completely frozen I bet ninty would replace it for you)
The hardware issues can be solved by taking care of it.

It's really hard to gauge the actual proportion of these issues nowadays, since people complaining on social networks get a lot more visibility than in the past.
Any console is going to have issues for a given % of users, there's hardly any way to escape it, the question is how high the problem rate is.

Half that video was people not paying attention when putting on the grips. There's literally a fucking - and + to guide you. If people are really this dumb.. I just.. I don't know...

That's a surprise to me as well, but they're quite easy to get off without using force.
