Thank you vary much for the different options to get this done.

Just to give an update, I did use Win32DiskImager for making a backup, turned out I already had it installed so why not use it. Was planning to use Windows to expand the partition but for some reason it would not allow me to do it (option was grayed out). Being I had limited time to play with it and just wanted it done I downloaded the free version of EaseUS and was able to resize it with that.

Aside from this whole process taking about half a day to do, it was vary easy and everything works.

You make an image of the SD card or use Hekate to backup the emuMMC. Otherwise just copy the files over.
