I am using an 128 GB SD Card and it got pretty filled up, and (for now) instead of deleting games or buying a larger card I am trying to make some extra space so I can try something.

When I'm inside the OFW, I see that the console's available space is 2.9 GB and the SD Card's 2.6 GB. Pretty much nothing:

But when I'm inside the emuMMC, for some reason the console's available space is now 8.9 GB! The SD Card's is still 2.6 GB:

While I'm in emuMMC can I move stuff inside the System's memory normally much like how I do in the OFW?

The emmummc reserves 32GB (the size of the mmc) for itself. Try to transfer a game from sd to system (in CFW). This will free up some space. Though investing in a bigger card would make life much easier.

The emuMMC is on the SD card, in a hidden partition. So what it thinks is system memory is actually on that hidden partition, but completely isolated from your real system memory. You can (and should) use that space, since otherwise it's just wasted.

If you move files from the SD card to the system memory, you will free up some space on the SD card both on OFW and CFW/EmuMMC.

The system memory is a 32GB flash memory chip inside your Switch. So with every game you copy over from the SD card to this internal memory, you free up the space of that game on your SD card.

The EmuMMC is either a partition of 32GB or a file of 32GB.
It has been allocated in advance so the size of it does not change.
If you move a game from the SD card to the system memory when you are on the emummc, the OS moves the game data inside this partition or file.
So you also free up the space that game used on your SD card.
