I have a US Wii. Is a JP-21 a possible output for this, or a Euro SCART possible? I'd like to get some really nice quality recordings out from it. Kinda hoping that component isn't the best option.

All Wiis are capable of RGB output; however, it's enabled in software. PAL games will enable RGB, while NTSC games will enable S-Video instead.
You're probably better off using component anyway, since the Wii only supports progressive scan using component.
