You'll need to set up a custom dns that blocks nintendo's update servers. Otherwise, yes, it would. Mine updated from 5.4.0 to 5.5.0 without me telling it to.
I put jibbrish as the ssid and passwords for all the internet connections. Im assuming that wont help then, eh? Since ill need actual access to the browser?

It'll obviously prevent Nintendo from force updating you, but yeah, you will need actual access eventually.
Blocking these domains on your router should work:
  • nus.c.shop.nintendowifi.net
  • nus.cdn.c.shop.nintendowifi.net
  • nus.cdn.shop.wii.com
  • nus.cdn.wup.shop.nintendo.net
  • nus.wup.shop.nintendo.net
As posted on https://gbatemp.net/threads/wii-u-homebrew-preparation.385895/

Nintendo appear to have changed the domains they use for their updates, apparently, according to Pioneer.

Blocked those domains and checked if the wii u was able to connect to them. She wasn't, but I still got the update. Turned of automatic update too in the settings. Looks like something went wrong. Hope hykems exploit will work on 5.5.1 too..

@Thirty3Three
  • nus.cdn.c.shop.nintendowifi.net
  • nus.cdn.shop.wii.com
  • nus.cdn.wup.shop.nintendo.net
  • nus.wup.shop.nintendo.net
These are suggested to be added as well:

  • c.shop.nintendowifi.net
  • cbvc.cdn.nintendo.net
  • cbvc.nintendo.net
This article is more up to date than the other one posted and has a lot more info as well. I strongly suggest it:
https://gbatemp.net/threads/the-definitive-guide-to-wii-u-hacking.396828/

and you need to change your DNS on your Wii U to the tubehax DNS.
Set up TubeHax DNS on your Wii U:
1. Go to Wii U Menu/System Settings/Internet/Connect to the Internet
2. Input your router's SSID and password (typically WPA2-PSK AES)
3. Input settings as follows:
IP Address: Auto-obtain
DNS: Don't Auto-obtain
Primary DNS: 107.211.140.065 (TubeHax DNS)
Note: This will leave you unable to access YouTube
Secondary DNS: 0.0.0.0
Note: This should make your Wii U fail to connect to the internet if TubeHax fails, though it's not confirmed.

Thanks so much forthe help guys. I appreciate it! - so I don't exactly have access to my router... assuming there's no third party application or anything to achieve similar results? - this is going to be fun haha! - maybe someone will port the exploit to an already-existing entry point, like Smash? Or correct me if I'm wrong, but mii maker? I get way nervous using online haha
